Shabu Shabu Recipe with One Pot Broth

There is nothing better than a slow cooker recipe after a long day—especially with next to no clean up. Get cozy with this simple one-pot dish filled with authentic Asian spices and flavor.

Ingredients

One Pot Broth

2 cups chicken broth
1/4 cup Mizkan Mirin
2 Tbsp. Mizkan Natural Rice Vinegar
2 Tbsp. soy sauce
black pepper to taste

 

Shabu-Shabu

1 cup Shitake mushrooms, sliced
½ cup carrots, thinly sliced
1/3 cup scallions or green onions, sliced
1 cup asparagus, sliced
2/3 cup spinach leaves or Chinese Napa cabbage, sliced
½ cup bean sprouts
½ cup cellophane (glass or bean thread) noodles – found in Asian aisle
1/3 cup frozen peas, thawed
4 oz. firm tofu, cut into 1in. cubes
8 oz. beef, pork, chicken, firm white fish, thinly sliced or shrimp, peeled
Fresh ginger, sliced

INSTRUCTIONS

  1. Pour broth into steamer pot. Add carrots, scallions, mushrooms and ginger to flavor the broth. Heat to a boil.
  2. Add remaining ingredients in the order given.
  3. Each person may wish to cook their own dinner, picking and choosing which Shabu-Shabu ingredients they want to include in their broth. Simmer several minutes.
  4. Serve everything in bowls with some of the broth. (Thicken broth with a small amount of potato starch, if needed.)

 

Note: Serve with rice and Teriyaki sauce if desired.
